Ingredients :
- 4 Florina red Peppers, in thin sticks
- 2 onions, in thin slices
- 100g fillets of Anchovies in oil, finely chopped
- 2 cloves of garlic finely chopped
- ½ cup extra virgin olive oil
- 400g Hilopites / Tagliatelle
- 1 tablespoon Capers rinsed, drained
- 1 tablespoon Brown Sugar
- ½ cup Ouzo
- ½ bunch of Dill finely chopped
- Salt, freshly ground black Pepper
Method :
In a large non-stick pan, heat the olive oil on medium high and sauté the peppers and onions for about 20 minutes until they are softened but not burned.
Add capers and anchovies and continue sautéing for 3-4 minutes. Sprinkle with brown sugar and continue sautéing for 2 more minutes on high heat. Season with salt and pepper, add the ouzo and cook for 1 minute until alcohol evaporates.
Boil the tagliatelle“al dente” in plenty of salted water. Using a pinch, pourthe tagliatelle into the pan with the peppers, along with as much water as they draw along with them, which will help the sauce tie with the pasta.
Add the dill and stir well. Serve immediately.
Non fasting version : Replace anchovies and capers with 200gr smoked Bacon diced into cubes.
