Organic / Biological vineyards ''Elinos'' of the Tarala family, are located in Naoussa, in B. Greece. There, in an area of 100 acres of completed biological production, high quality wines are being producted, the Xinomavro variety.
Every year, from mid-May to mid-June, the vineyards of Greece are filled people, although the grapes are not yet ready and it is not the season of harvest. It's the time to gather the grape leaves, the key ingredient for one of the most famous traditional dishes, the dolmades.
Choosing only from the upper part of the plant, where the leaves are much more tender, is being made by hand from experienced staff, who, with great care, love and passion for this unique product, only chooses large, well shaped and tenderly sheets. Carefully and rapidly they are being transfered to our contemporary, quality certified facilities so our professional staff to make a second more detailed screening. The stems are being removed and then the leaves are being put in jars with brine, which starts the process of pasteurization. The whole process only lasts a few hours and this ensures the proper maintenance of the leaves, until they reach your kitchen, and the preservation of all the nutrients of the meager vine leaf.
