Thyme and wild flowers honey has a fragrant, pleasant taste, with rich flavour and shiny appearance, in light colour. It is derived from nectar of different wild flowers and thyme, from the Greek plains and mountains. It is produced from May to August. It consists of a mixture of sugars and other components and provides to the body numerous of nutrients. Regarding carbohydrates, honey mainly consists of fructose (approx. 38.5%) and glucose (approx. 31%) and also smaller amounts of maltose, sucrose and galactose.
Crystallization and quality: Crystallization is a natural phenomenon not related to the quality of the honey and does not cause any changes in its' nutritional value. A crystallized honey is neither adulterated nor damaged. It can be liquidated easily if you place the jar in a bain -mari with hot water 40 ° Celsius for a few mins.
