    Our raw honey is made from flowers and thyme harvested from the Greek countryside and Lefkada island. Our bees collect honey from nectar found in fertile valleys full of thyme and honeydew from a wide variety of wildflowers between the second half of June and the first half of July.

    Our Blossom and Thyme honey is categorised as raw honey. When honey is extracted from the beehive, it is only strained to remove wax and other non-honey particles. Honey does not undergo any heat processing. In that way, processing does not severely affect its vitamins, antioxidants and nutritional properties.

    Thyme honey colour is light amber when is liquid, and gets darker when it is crystallised. It is a very strong, intensely aromatic honey with resinous, herbal, savoury flavours. The taste is persistent, lingering in the mouth, as a delicious healthful sweetener.

    Thyme honey has many properties and benefits for human health. It is an antioxidant powerhouse and immune antiseptic. It is rich in carbohydrates, especially minerals and trace elements such as calcium, magnesium, boron, silicon, iron, zinc, and manganese.
