Greek Squid Ink Hilopites / Tagliatelles with Tuna and Extra Virgin Olive Oil

Ingredients :
- 500g Greek Squid Ink Hilopites / Tagliatelles
- 400g Greek Tuna in Olive Oil (cleaned in an easy open tin can)
- 1 cup of herbs (parsley, dill, basil), fresh or dried
- zest from 1 lemon
- ½ cup white wine
- 5 sun dried tomatoes
- 10g capers
- 300g Traditional Tomato Sauce
- 60ml extra virgin olive oil
- salt, freshly ground pepper
Directions :
- In a large pot boil the pasta (Hilopites / Tagliatelles) in plenty of salted water for 1 minute less than instructed by the packaging.
- Meanwhile prepare the remaining ingredients. Finely chop the parsley , the dill, the basil and the sundried tomatoes.
- In a large non-stick pan, heat the olive oil and sauté the tomato sauce. Then add the tuna, the lemon zest, the sun-dried tomatoes and caper to the pan. Deglaze with the wine and stir well for 2 minutes.
- Pour the herbs into the pan and stir for a while. Add the Hilopites / Tagliatelles, the salt, the freshly ground pepper to the pan and stir well to mix the ingredients. Sprinkle with a few more herbs and serve.
